Crisp Pig Ear Salad


Yes, you read that caption correctly - that is a crisp pig ear salad!
 I went to dinner with friends at Holeman and Finch last night and had an amazing meal.   

This was the most unusual of the dishes that we tried and I was impressed at how many others in my group tried a bite and joined me on this little culinary adventure.    I didn't love the jalapeno in the mix, but I liked the surprising combination of the crispy pig bits, greens, celery and blueberries. 

I have had a lot of different parts of a pig over the years but this was definitely a first for me.  I am certainly glad I tried it but it was not really my fave to be perfectly honest.  

But then again - I always say that you are allowed to not like something as long as you have tried it a least once.   Do not let the idea of a food get in the way of experiencing it for yourself.  You may be pleasantly surprised.   i know I was when I tried sushi, sardines, pork belly..... and list goes on and on!
