Classic Cooking #62 - Spaghetti Carbonara
I have begun my project of cooking 101 classic recipes... starting with spaghetti carbonara. At first I thought that the recipe produced way too much food for just me to eat. But I keep going back for more helpings, and the leftovers taste great!
I didn't have pancetta so I used bacon. Yummm....Bacon! It took a little while longer to cook than the recipe called for with the substitution of ingredients but it still smelled and tasted fabulous when it was done.
It is amazing how creamy the final result turned out to be even though there was absolutely no cream involved. Just the combination of cheese, egg and pasta water with the pancetta/bacon and wine mixture coats the pasta beautifully.
