Less meat but not vegetarian....
I didn't make this, but I did eat for my dinner. Apparently this is gong to be a pasta heavy week.... and that is ok by me! This is a great example though of how I am trying to eat these days. There is only a little bit of chicken mixed in here with the pasta, cheese and red bell peppers. Why does this matter you ask?
Having flirted with going vegetarian, eating only organic, hormone and antibiotic free meat or only having meat one meal a day, I have discovered a few things about myself and the food system we live within.
First - I love bacon. I can never go fully vegetarian. I love bacon and I also love seafood so pescatarian is out too.
Second - modern life does not always allow for the kind of meal planning that we would like to achieve.
Third - At this point in my life, all organic is not feasible for many reasons. The main one is financial. I have enough to eat plenty of healthy food, but not all organic all the time.
So I have decided to go with another option that most people don't seem to even know exists: I simply make an effort to eat less meat at each meal.
When you eat meals in which the meat portion is small, it becomes more like a garnish than the main feature. By allowing vegetables and grains to be the stars in my dinners, I am at least reducing the amount of meat - particularly the non-happy cow, pig or chicken kind. This is a diet that allows for eating out, going to parties and cooking well within a tight budget. This is plan where you do not feel denied the tastes you crave, but also does make you feel healthy and environmentally responsible.
