Today's Pairing Post -- grilled cheese with cornichons




Some things just say fall weather comfort food - like grilled cheese sandwiches!!
There are lots of ways to amp up the traditional combo of melted cheddar between buttery slices of bread - this just happens to be one of my personal favorites: add cornichons and use sunflower bread.
I used Karst which is a cheese that falls somewhere in between cheddar and gruyere.   It melts great and has a nice bite with a milky finish.   The cornichons contribute salt and acidity to the cheese with its sharp edge.  This balances well with the nutty flavor of the sunflower bread and the real butter that I use to grill up the complete sandwich.
